The olives of Castello la Leccia, the same day they are harvested, are gathered in a large hopper, cleaned from the leaves and twigs and then transported by conveyor belt to the washing plant. Then, with a Archimedean screw they are dosed into the press that reduces them to a pulp. This olive paste is dropped into the mill where it remains for 30 minutes and is processed at a controlled temperature of approximately 27°. This delicately handled mixture is then transferred into decanters, and left to separate into its three components: solids, vegetable water and olive must. The must is then centrifuged again to separate any water residue from the oil. At the conclusion of the entire process the oil is filtered and in the days that follow, is bottled, great care being taken not to disturb its organoleptic properties.
